📖 The Story Behind "Ito-okashi" The birth of this masterpiece was actually a happy accident! In 2007, Takagi Brewery mistakenly received the CEL24 yeast instead of their usual order. Mid-fermentation, the brewers noticed an intensely fruity aroma that was completely unexpected. Instead of discarding it, they decided to press it as a Junmai sake. The result was a surprisingly delicious, modern sake.

They named it "Ito-okashi"—a classical Japanese phrase meaning "highly intriguing," "beautiful," or "amusing"—to celebrate this wonderful twist of fate.
