Crafted in Ainan, Ehime, Japan, Fujimarutsu Traditional Honjozo Soy Sauce has been brewed since 1906 using the same time-honored methods passed down through generations. Brewed in Japanese cedar barrels (Sugi-oke) that have been used for over 100 years, this soy sauce develops a rich aroma, mellow taste, and deep umami that reflect more than a century of craftsmanship.

Made with only three ingredients—defatted soybeans, wheat, and salt—this naturally brewed soy sauce is created from naturally dripped first soy sauce (Kiage), collected without pressing and gently heat-treated to preserve its authentic flavor. Every bottle embodies the heritage, dedication, and artisanal craftsmanship of traditional Japanese soy sauce brewing.

Traditional Cedar Barrel Brewing

Fujimarutsu continues to brew its soy sauce in Japanese cedar barrels (Sugi-oke) that have been passed down for over a century. The natural microorganisms living within these wooden barrels, together with generations of brewing expertise, create a depth of flavor, aroma, and mellow character that cannot be replicated through modern mass production.

Simple Ingredients

Made with only defatted soybeans, wheat, and salt, this Honjozo soy sauce contains no unnecessary ingredients. Naturally dripped first soy sauce (Kiage) is collected without pressing and carefully heat-treated to preserve its rich aroma and deep umami.
