About Housui Brewery
Housui Shuzō is a traditional sake brewery located in Miyoshi, Tokushima, in the quiet mountain town of Ikawa. Founded in 1913 (Taishō era), the brewery has continued its craft for more than a century with a clear philosophy: to make honest sake that naturally fits into everyday life and brings people together at the table.
Housui’s character is deeply shaped by its surroundings. The brewery uses pure underground water drawn from the Yoshino River, known for its clarity and softness, along with carefully selected rice from the region. Key varieties include Yamada Nishiki and Okayama Omachi, both prized sake-brewing rice types that help define Housui’s clean structure, depth, and elegant aroma.
The cool inland climate allows for slow, steady fermentation, resulting in sake that is clean, dry, and beautifully balanced—designed to complement food rather than overpower it.
Today, Housui Shuzō remains a small, hands-on brewery, producing sake under its core label “Housui” with quiet confidence and consistency.
