Fujimusume from Fujimusume brewery

Junmai Ginjo

Rice-polishing ratio: 60%
Alcohol content: 15%
Region: Kochi Prefecture, Shimanto area (Japan)
Rice used: Kochi-grown “Gin no Yume”
Serving temperature: Chilled

This Junmai Ginjo “Fujimusume,” brewed with Kochi-grown Gin no Yume rice and polished to 60%, has a clean, understated character typical of the region. The aroma is gentle, offering light notes of rice, faint pear, and a soft floral touch rather than bold fruit. On the palate, it is smooth and refreshing, with a dry finish (SMV +3) and mild acidity that gives it a quietly structured balance. The overall impression is crisp, calm, and pure—thanks in part to the soft water of the Shimanto River used in brewing.

It pairs beautifully with white fish, lightly seasoned vegetables, tofu dishes, and simple home-style Japanese cuisine. Enjoy it chilled to highlight its clarity, or gently warmed for a softer, rounder expression.

About Fujimusume Brewery

Fujimusume Shuzō is a small, traditional sake brewery in Shimanto, a region known for what many call the last clear stream in Japan. The brewery has carried on its craft, making sake entirely by hand — from koji-making to pressing — with patience and respect for tradition. For them, sake is more than a drink; it is something that becomes part of everyday life, shared in moments of laughter, comfort, and connection.

Using local rice such as the Kochi-grown “Gin no Yume” and pure water from the Shimanto River, the brewery combines the region’s natural character with techniques refined over generations. The result is sake that is gentle, expressive, and never tiring to drink. Though small in scale, Fujimusume Shuzō has long been loved across Japan, with many visitors traveling to its remote hometown just to experience its sake firsthand.

Even today, Fujimusume Shuzō remains a hands-on, family-centered brewery. Each bottle reflects their hope that people can savor a little bit of Shimanto wherever they are — and perhaps feel inspired to visit the place where this sake is born.
